There are three states of matter: Solid, Liquid, Gas.

If it is the charge of state is traveling from one state to another, for example, you have a piece of ice.  When the ice melts and becomes water, it changed the state of matter from solid to liquid.

When you boil water and water vapor are released, the water changed from liquid to gas.

In the end, the change of matter is changing from one state to another.
